This is a great low-carb, grain-free, & absolutely delicious recipe with a beautiful and fun presentation.
Spaghetti Squash Ragu
Serves: 4 (half squash per person)
Prep Time: 20 minutes
Cook Time: 20 minutes
1lb ground beef
1/4 cup finely diced onion
1 jar marinara spaghetti sauce (or homemade)
1/4 cup red wine (optional)
2 medium spaghetti squash, halved
Chopped parsley or arugula
Parmesan or Asiago cheese
Sear ground beef in a sauce pan until nicely browned. Add onion, sauce and wine. Turn heat to low and cover. Preheat oven to 350 degrees. Line a baking sheet with tinfoil and place squash flesh side down on baking sheet. Cook for 20 minutes and turn off heat. Let squash rest 10 minutes in oven before serving.
To serve, use a large spoon to release squash from skin. Fluff spaghetti squash in skin so that the skin acts as a bowl for the squash. Spoon sauce into squash bowl and garnish.
